Pickled vegetables and pickles
Preserving vegetables from your own garden.
Whatever you harvest from the garden or find in the vegetable drawer can be combined and preserved. This results in exciting combinations ranging from sweet and sour to sour, which go perfectly with raclette and fondue or enrich your diet as pickles for a snack. Course participants will work with beetroot and rose petals, onions, carrots and other vegetables to make both asazuke (Japanese quick pickles) and traditional pickles in jars. In the theoretical session, you will learn about the ‘mixing cross’, which helps determine the correct vinegar ratio for pickling.
